3 Reasons WHY you should try CHICKPEAS


What are Chickpeas?

Well...Chickpeas are seeds and is one of the earliest cultivated legumes, believed to have originated from the Middle East.


Why should I try them?

  1. Chickpeas are a very good source of protein

  2. They also pack a good punch of vitamins & amino acids including folate, iron, phosphorus, Thiamin, vitamin B6, magnesium, and zinc. Chickpeas are rich in essential amino acids such as lysine, isoleucine, tryptophan, and total aromatic amino acids.

  3. Eating Chickpeas is an inexpensive and easy way to whip up a healthy and delicious meal.

How do I prepare them?

Chickpeas are widely cooked and eaten, so the list of recipes are endless, but here is a healthy and easy dish you could try out.


Roasted Sweet Potato and Chickpea Salad


Ingredients:

2 medium sized sweet potatoes peeled and cubed

2 T olive oil

2 red onions peeled and diced

100g of feta cheese

Salt & pepper

1 glass bottle of chickpeas, drained and rinsed

1 punnet of cherry tomatoes (halved)

200g of baby spinach

1/2 of toasted sunflower and sesame seeds

2 cloves of garlic roughly chopped (optional)


Heat the over to 180° Celsius / 356 Fahrenheit

Toss the sweet potato, olive oil, garlic and onions with salt and pepper in a roasting pan and roast for about 30 min till golden brown.


Let is cool down and in the mean time, arrange the baby spinach on a platter. When the sweet potato is cooled down, mix with the feta, seeds and cherry tomatoes.


Place this mixture on top of the baby spinach and dress with your favorite dressing!
